Glen Rose has plenty to offer those looking for a relaxing weekend getaway, whether your preference is strolling its charming downtown square, a driving safari through the Fossil Rim Wildlife Center, fun with the kids at Dinosaur World, or hiking alongside 113-million-year-old dinosaur tracks at Dinosaur Valley State Park. And, of course, who doesn’t love those whimsical Dinos on nearly every street corner? And after your day is done, what better way to relax than with a glass of wine under the watchful gaze of John Wayne at downtown’s newest addition, Noblemen Wines Texas Cellar?
Noblemen Wines and the Texas Cellar are owned and operated by Victor and Elizabeth Eichhorn. The Noblemen Wines brand was founded in 2019 by Austin and Katie Pitzer and acquired by the Eichhorns in 2025, who made the wines available through their wine shop, the Copper Rose, in San Antonio’s Beacon Hill district. The Eichhorns created the Copper Rose in January 2025 to fill what they saw as a gap in their community, namely an intimate gathering place for folks to meet and enjoy a glass of wine with friends and neighbors.
Looking to expand their vision, they began to explore possibilities for a second location. Recognizing Glen Rose as a growing and vibrant tourist destination—and with Elizabeth having deep family roots in the area—they thought it would be a perfect fit for Noblemen Wines. Their timing was fortuitous as two separate, but adjoining spaces had recently become available on the downtown square: the largest of which was a unit just off the square on Barnard Street, formerly Bull Lion Ranch Wine Shop, and a smaller space around the corner that had been occupied by Cowboy-Up Chocolates. The larger of the two was perfect for a tasting room (more on the smaller space later), and so Noblemen Wines Texas Cellar opened its doors on January 8, 2026.
I had been looking forward to meeting Victor and visiting the Texas Cellar since its opening, but knowing that he split his time between Glen Rose and San Antonio, I waited for a day he would be in town. Catching him on a late July weekend, my wife and I made the short drive to Glen Rose. The tasting room is located in the historic Campbell Building, built in 1895 by doctor T. B. Campbell, on the east corner of the downtown square. Its 18-inch-thick native limestone walls and warm wood interior give the room an early-Western Texas saloon vibe, which is further accentuated by a 10-foot statue of John Wayne, created by artist Robert Summers, in the far corner of the room. The Duke is popular with guests as a backdrop for selfie photo opportunities.
The Duke
Victor was still en route from San Antonio when we arrived, but his associate Lauri greeted us and directed us to seats at the bar. Lauri is a former high school principal and fount of knowledge about all things Glen Rose. Looking over the wine menu, the first thing I noticed was that it featured producers other than just Noblemen Wines. “Oh yes,” Lauri said, pointing to a row of shelves behind us, “we carry wines from quite a few winemakers across the state.” On those shelves I found wines from producers ranging from the Davis Mountains to South Texas, several of which were also listed on the by-the-glass menu.
The Texas Cellar currently offers two tasting flight options:

And, of course, all wines on the menu are available by the glass or bottle. Lauri noted that Victor wanted us to try all the Noblemen wines, so we settled in for an extended flight of those listed above as well as a Piquette, a newly released 2025 Semillon, and a 2024 Cinsaut. I was very impressed with each wine. The Piquette was lively and refreshing, the Picpoul pleasingly balanced, and the reds consistently round and well-structured. None fell short in my opinion. My personal favorites were the 2025 Picpoul Blanc and the 2022 Red Blend, a dark and opulent blend of Carignan and Tannat. A bottle of each went home with us.
Shortly after we began our flight, in walked the man himself, Victor Eichhorn. Victor is one of those who has never met a stranger. Every visitor who comes through the door is instantly a friend. Victor took the reins from Lauri – she was at the end of a long shift – and we continued our tasting while chatting about Noblemen Wines, the Texas Cellar, and his passion for Texas wine. All Noblemen Wines are sourced from 100% Texas grapes and made to Victor’s meticulous specifications. Indeed, his passion and enthusiasm were infectious. As we talked, it was obvious that Victor sets a very high standard in all his endeavors and wants his wines to reflect nothing less.
Noblemen’s wine club is called the Noblemen’s Society. The name, Noblemen, pays tribute to the “Noblemen of Texas,” a group of German nobility who led an emigration effort to the state in the 1840s. These “Noblemen” eventually founded the town of Fredericksburg.
The Noblemen’s Society offers two options. Both club levels are shipped twice a year and offer custom selection.

- Six bottles per shipment
- 15% discount on all wines at both stores
- Pioneer Club:
- Twelve bottles per shipment
- An extra 5% off (20% in total discounts)
“Have you seen the other room yet?”, Victor asked at one point. Uh, no.
Brazos Club
Following him through a door at the back of the tasting room, we were ushered into the Brazos Club, a slightly smaller space adjacent to the Texas Cellar with a private entrance on Walnut Street. This club is separate from the Noblemen’s Society and offers members 24/7 access to the room for a simple monthly fee. Each club member is assigned a private locker and access to the entrance door. The space can be used for meetings, parties, or the member’s own private enjoyment. Refreshments are BYOB, but the room does come with a fully equipped kitchenette including a sink and refrigerator. Victor noted that the San Antonio Copper Rose has a similar private club room, which has been very popular.

Offering a true taste of Texas, Noblemen Wines Texas Cellar is a must-visit when in Glen Rose. Whether your groove is the exceptional wines under the Noblemen Wines label or the great selection of Texas wines by producers across the Lone Star State, there’s something for everyone. And who wouldn’t want to share a glass with the Duke?
