I had heard about a new wine shop in San Antonio back in March, but I did not get a chance to visit until the Summer Solstice. Copper Rose Wine had a preview of Noblemen Wines’ Piquette. While there, I learned that the shop’s owners, Victor and Elizabeth Eichhorn, recently purchased Noblemen Wines. That visit was just the beginning.
Copper Rose Wine opened in January 2025 in the Beacon Hill neighborhood of San Antonio. A short four months later, Victor and Elizabeth purchased Noblemen Wines from founders Austin and Katie Pitzer. Today, locals and Texas wine enthusiasts can visit the shop to experience Noblemen wines and Copper Rose’s hospitality.
The shop grew from personal need. The Eichhorns liked spending evenings with friends while enjoying some wine. They went looking for a neighborhood bar or similar establishment that they could walk to and found nothing. So began the research and development of what would become the wine shop.Elizabeth and Victor wanted a community space, a place where neighbors can easily gather and socialize. Luckily, they found a place on Blanco Road that provided everything they needed. They named it Copper Rose as a tribute to Victor’s father, known for crafting copper roses that adorn many spots in the wine shop.

The current space is bathed in light from the large front windows, and the layout helps to foster a communal atmosphere. Outside, groups can gather underneath shade trees. Parents can enjoy a glass of wine while their children enjoy the play equipment safely tucked away from the street. This addition has led to moms meeting and creating play groups.
Copper Rose, though, is about wine. The wine list boasts a range of prices. They have a rotating and affordable by the glass list that changes every three weeks. Wines come from all over the world in a variety of types and styles. During my first visit, I drank all Texas: the Noblemen Sauvignon Blanc and Saint Tryphon Farm & Vineyards’ Albariño. The by-the-glass list always includes Noblemen Wines.

While doing research for the concept, Elizabeth and Victor saw a mostly untapped connection between San Antonio and the nearby Texas Hill Country. Even before purchasing Noblemen, Copper Rose Wine carried Texas wines. Noblemen was one of the first wineries carried, and today that includes others such as Reddy Vineyards and Saint Tryphon. They also carry ciders, including Texas-made ones, such as City Orchard from Houston.
But why, after opening the wine shop, did the Eichhorns choose to buy Noblemen Wines? First, they got the opportunity through Victor’s wine tasting group; Austin, the founder, belonged to the group. Also, Noblemen Wines were among some of the first Texas wines Elizabeth and Victor tried, and the first that excited them. Other aspects about the brand interested them as well; a fellow husband and wife duo owned the brand, and a dedicated audience resided in San Antonio.

Beyond the shop, Victor and Elizabeth strongly support farmers, and they have backgrounds in agriculture. For them, wine is an agricultural product made in the vineyard, and they want to take part in that side of winemaking. Right now, they are sourcing from Texas vineyards with the aid of their winemaker, John Rivenburgh, and hope to expand beyond those vineyards. They also want to have a vineyard of their own, and they have a plot in North Texas to do just that. This year, like others, they lost fruit due to the recent flooding, as they planned to source grapes from the vineyard Rivenburgh lost in Hunt.
Noblemen has focused heavily on red wines, which are available at Copper Rose Wine. When last I visited, the Sauvignon Blanc, Montepulciano, and Piquette (made from 100% Teroldego) were available by the glass. The rest of the wines are available by the bottle for purchase online at the Noblemen Wines website and through the Copper Rose Wine physical location. They are excited about upcoming releases, including the newest vintage of their Leolibra, which is currently only available to wine club members. Also, Teroldego and a new Montepulciano are coming, and in the future, they will have a new Alicante Bouschet.
The new owners plan to grow Noblemen Wines and Copper Rose Wine. An expansion for Copper Rose is slated for later this year, providing more inside space. The expansion will allow them to offer a wide variety of food options beyond the ready-made snacks currently available, which include a wide selection of gluten-free options. As for Noblemen, they hope to expand their portfolio with more whites and rosés to contend with Texas’s summers.
Elizabeth and Victor Eichhorn
Copper Rose Wine and Elizabeth and Victor Eichhorn are waiting to share their wines with their community and beyond. They are currently open seven days a week, mainly evenings, with full days on Saturday and Sunday. The Beacon Hill neighborhood is walkable and includes art galleries, restaurants, shops, and parks, including San Pedro Springs.
