Hill Country Distillers is located in Comfort, Texas, and is owned by John and Cayce Kovacs. The distillery only uses ingredients native to Texas and no corn or grain is used in their products.
Tastings of their spirits is complimentary and there are many cocktails which can be purchased and then enjoyed at the cocktail bar.
The first spirit we tasted was the Texas Moonshine Prickly Pear Cactus which obviously is made from prickly pear cactus, not infused. The Moonshine was aged for one year in Garrison Brothers barrels. The single distillation is done with no filtering and is made in a 100 gallon copper still made in Kentucky. The 102 proof spirit was a good start to the tasting.
The next Texas Moonshine was Jalapeño Peppers made from jalapeño peppers. This seemed appropriate because Hill Country Distillers is located in the previous location of Comfort Cellars whose one specialty was jalapeño wine.
After the Moonshines, next up was their Texas Revenge Gin. The gin is made from prickly pear cactus and Texas juniper berries. This was 80 proof.
The Texas Dulces came next which are liqueurs and are 50 proof. The base for the Dulces is the Prickly Pear Cactus Moonshine and are infused with different fruits. One Dulce available is infused with Grapefruit and the other is infused with Orange. The Dulces are made very similar to how Limoncello is made.
The Moonshines and Dulces are available in both 750 ml and 375 ml bottles, and the Moonshines are even available in 50 ml. The Texas Revenge Gin is only available in a 750 ml bottle. There are a wide variety of products available for purchase in the gift shop including shirts, coolers, glasses, and even barrels.
Live music events are held at the distillery. A food truck will be available at the distillery every Sunday starting in April.

My wife, Kim Terry, and I have held three book signings for her suspense novel at The Distillery with wonderful success. The atmosphere is superb and the spirit are pure joy. The owners and managers and the head distiller along with the wait staff do and excellent job of making all guests feel relaxed and at home. Anytime you are in the southern part of the hill country I highly recommend stopping by The Distillery for a taste, just ask for a tour of the distillery itself and see how they process their products.
