The Infinite Monkey Theorem is an urban winery located in Austin. Aaron and Meredith Berman moved from Denver to open and manage the new Austin location. The original Infinite Monkey Theorem winery is located in Denver, Colorado. The Austin extension opened on November 13, 2015.
The winery is in a warehouse location and is easily found. The first thing you’ll notice when visiting is the graffiti-style graphics on the outside of the building which continues inside the tasting room on the walls. This style fits in perfectly with the eclectic decorating right down to the tables, chairs, and seating areas throughout the tasting room.
Tastings are done a little differently at the Infinite Monkey Theorem. We visited on a Sunday and instead of a regular tasting menu, there is a tasting fee for flights of three wines of two ounce pours. The wines are poured from either a tap or bottle. For the wine flights, you can sit at the tasting bar or one of the tables.
These are the wines and ciders that were available when we visited:
- Dry Hopped Pear Cider
- Riesling
- Chardonnay
- Texas Rosé (Cinsaut)
- Syrah
- Cabernet Franc
- Malbec
- Blind Watchmaker Red (Merlot, Petite Sirah, Cabernet Franc)
- Petite Sirah
The only current Texas wine is a Rosé made from Cinsaut, but in the barrel room there are a number of Texas wines being aged. Next year seven to eight Texas wines will be coming out including Cabernet Franc and Merlot. The grapes for the other wines come from Colorado with some from California. Winemaker Ben Parsons who cofounded the business in 2008 still lives in Denver. The winery currently makes 2,500 cases of wine a year.
One of the unique things about Infinite Monkey Theorem is some wine is available in cans in a 250ml size. That’s right, pop open a can and enjoy it anywhere without having to worry about breaking a wine glass. Canned wines can be purchased individually or in four packs, either the same or in a mixed pack. These are the canned wines and cider available:
- White Wine (Chardonnay)
- Rosé Wine
- Red Wine (Merlot)
- Moscato Wine
- Dry Hopped Pear Cider
If you don’t like drinking out of a can or glass, a porron is available which can be filled with any of their tap wines. A porron looks like a cross between a wine bottle and a watering can and you drink from it by holding it above your head and pouring the wine into your mouth. This allows a group of people to enjoy the same wine hygienically, plus it’s just plain fun.
Food is available which comes from the Buzz Mill restaurant. Food available is a cheese plate, meat and cheese plate, and a bison slider duo.
Appointments can be made to do private wine tastings with a tasting guide, appointments for a winery tour, and private tastings for groups. A wine club is available. Events are always happening at Infinite Monkey Theorem including events such as yoga, open mic comedy night, and live music. Check their Facebook page for the constant number of events.
Future plans are already in the works for an outdoor patio and an inside mezzanine located above to rent out for events. When it comes to harvest time again, the winery welcomes people to come and help press grapes.
