We recently joined the Greater Houston Chapter of the Wine Society of Texas. On Sunday, May 3rd, the chapter had the entire Kris Bistro & Wine Lounge to ourselves for a fabulous three course meal featuring Old World and New World wines with each course. If you have not heard of Kris Bistro, it is a restaurant inside the Culinary Institute LeNôtre which is a training center for culinary students and is known for quality French cuisine and pastry.
Before the meal, we had a wine reception which started with a French Champagne and a California sparkling wine side by side, and of course with different appetizers served while we enjoyed the wine. The group seemed to be mixed as to which wine they preferred. The wines were:
- Old World: Chateau Moncontour Sparkling Vouvray Brut
- New World: Scharffenberger Brut
Next for the reception were two wines from Duchman Family Winery. Unfortunately owner Dr. Stan Duchman was unable to attend the event but we enjoyed the 2012 Duchman Vermentino and the Canto Felice which is a semi-sweet red blend.
We all seated for our first course which was a Diver Scallop: Pan-seared over wheat and rye berries, black quinoa in a sage reduction, candied blood orange, meyer lemon, vanilla parsnip puree
This was served with:
- Old World: Marie de Beauregard Vouvray 2013
- New World: Adelsheim Chardonnay Caitlin’s Reserve
The second course was a Miso-Marinated Short Rib: Braised in a Bordeaux Cabernet Reduction, warm bacon potato salad on creamy grits and sautéed rapini.
The wine paired with the course was:
- Old World: Goretti Sagrantino di Montefalco 2007
- New World: Independent Producers Cabernet Columbia Valley
The third course was dessert with Chocolate Noisette, Toffee Piedmont, and Mignardise.
This was served with two Ports:
- Old World: Ramos Pinto Tawny Port 10 Year Ervamoira
- New World: Messina Hof Papa Paulo Port Private Reserve 2010
