Have you walked into a Texas winery around Fredericksburg lately and seen a lovely lady selling chocolates in the tasting room? We did so recently at Pedernales Cellars. If you took some interest instead of heading directly to the wine, you would have met Catherine (Cathy) Locke of Cathy’s Sweets. Cathy Locke serves her chocolates in winery tasting rooms which is only appropriate since some of her chocolate truffles are made with Texas wine.
Cathy Locke is the custom chocolatier for Cathy’s Sweets. The company has been hand making unique Belgium Chocolates since 2009. Cathy’s Sweets was started after a change in Cathy’s professional career in the health care field, and since she had a strong desire to learn all she could about the “World of Chocolate.”
The desire to become a custom and unique chocolatier was taught after a year by the school of H.K.C. (Hard Knocks College). She also had a strong desire to learn how to combine the world of chocolates and her love for Texas wines and the ongoing fascination of viniculture. After several years of perfecting her recipes and constantly tweaking her formulas, she has been able to successfully customize chocolate truffles exclusively for Texas Wineries.
Cathy’s Sweets is located in the “Hill Country” of Pipecreek, Texas with a commercial kitchen and small retail area next to the kitchen. Most of the time Cathy is delivering custom chocolate truffles to various Texas wineries and sometimes is giving samples as well as selling gift boxes for wine club members. Her love for Texas Wineries and being able to live in Texas has been a dream come true.
All of Cathy’s chocolate truffles are handmade and she prides herself on using natural ingredients and organic supplies. One example of Cathy’s truffles is grape cluster bittersweet Port truffles for Messina Hof’s Hill Country tasting room and the Bryan location which she makes over 1000 every other month.
She also paired Texas wine Truffles and served Bending Branch Tannat wine at Texas Treasures Fine Art in Boerne.
When we are at Pedernales Cellars and learned Cathy had made chocolate truffles with Pedernales Cellars’ Muscat Giallo, we had to buy some. I wish I could show a photo but they didn’t make it home!
